What is happening!?

This is my first go around with growing anything that uses a mycelium network. So I think I should give you guys as much details as possible as well.

The terrarium with 3 have been in there for almost 2 weeks. They seemed to have changed very little from the time I took them out till now. The taller one had weird mucus on it that dried up and went away. The two little ones just aren't doing anything.
The terrarium with many cakes has only been about 4 or 5 days since birth, i'm just concerned that i'm doing something wrong. The big thing on the side of one of them I am hoping will be my first pin. Otherwise I couldn't imagine what it could be.
In both terrariums, they stayed at 99% humidity and 73-76 degrees. They also have standing water collecting from spritzing the sides of the bins with a spray bottle. Some of the cakes I birthed I broke up and turned into big poo teks using the "Elementary Coir Tek". 2 large cakes were used per bin. Predominantly all cow manure, a little mulch came with the poo.. the assholes... but it should be okay, right? Verm added as well. They seem to be doing nice.
My main reason for posting is, what reasons could be for the terrarium of 3 to not be doing anything after 2 weeks, does the setup look appropriate, are the temperature/humidity settings right, does my poo teks look right? Is it okay to have the lids on? Any suggestions, tips, anything would be appreciated!

Build a proper SGFC with 1/4" holes every 2" in a grid pattern on all 6 sides.
FAE(Fresh Air Exchange) is a main pinning trigger, they are suffocating....you need to initiate the fruiting process by giving them tons of constant fresh air, so there is constant evaporation going on...this will keep the chamber humid. You want high levels of co2 for colonization, then low levels during fruiting...this is also accomplished by having constant fresh air.
There should be no standing water, ever. Mist the cakes, not the plastic tub....evaporation off the cakes is a main pinning trigger.
You cannot expect pinning to occur when you haven't really initiated fruiting yet.
Worry less about humdity, and more on constant fresh air. (Follow the tek linked above)

Thank you very much. This makes me want to remove the standing water, make fine holes on the perimeter of the bins, add damp perlite, remove the wire mesh, and get an analog hygrometer. Could you or anyone explain what needs to be done to the poo teks? I'm under the impression I should leave them in the room they are in, dark no light, until its fully colonized, then take the lid off, mist, and let sit for another week?

Make the holes as described, skip the hygrometer.
There is no need to keep them in the darkness, 12/12 ambient light is beneficial during all stages of growth.
If you used the bucket tek for manure, it will most likely contaminate.
Manure requires proper pasteurization...which means keeping the core of it between 140-160F for 60-90 minutes....not pouring boiling water over it in a bucket.
Same rules apply to manure when fruiting....you want tons of FAE once fully colonized, so there will be tons of evaporation.
There is no need to wait an extra week for bulk like with cakes....just fruit them(Constant Fresh Air) right at full colonization.

Im currently about to go to walmart for supplies to build a proper shotgun tek. The link you provided was extremely helpful, and a few other examples from posts from users here on the forums. As for the poo tek, i'm going to add holes to the bins and remove the lids when colonized. Thank you very much for your help.
