Used a clean lc "clone" on these bags and grain jars. No jars show these yellow dots. This grain in the bags is, I think millet. They were bought pre sterilized. Searched the forums and anything that was remotely close was deemed metabolites. These are nit metabolites. I've seen them before, many years ago. So...what is it?

Looks like some kind of mold. If you're only seeing it in the bag I'm guessing it's not the LC, maybe the bag tore somewhere or it got in during inoculation.

It appears to be in all the bags. Guessing that they were not properly sterilized. But what mold is it?

Yeast contamination. I'll leave the pics up for others to see as in other posts from years ago pics are deleted.

I can't quite tell from the pics but it looks as if every kernel there has exploded / is overcooked prior to your sterilization attempt.

Yeast contamination.
What makes you say that? I can't make the individual dots your talking about but a lot of molds do produce little dot like fruiting structures. For example...

So....I took one bag outside and opened it up. Smelled like very strong mushroom mycelium. Stronger than usual, but not bad at all. I know when things contam, throw em out. I've never encountered yeast contam before though. If I spawn these, who will win?

I've used yeast(I assumed) contaminated spawn before with coir/verm, and had no issue. I'm not sure of what yeast it was exactly, or if it was even yeast, but it was small somewhat slimy white dots that were only really visible on the black bird seed. Over time the jars colonized as normal with no sigh of the yeast visually or scent-wise(it could've even been a bacteria, I'm not sure), and I figured I'd give it a shot. The bulk colonized and fruited perfectly, for multiple flushes.
With contamination as prominent in your bag I would highly suggest against using it as spawn.
Spawn that has beaten back minor cases of bacteria(and yeast) can be used without incident, but what you have is not minor.
