Cakes not pinning...

A friend of mine has had 2 cakes in a terrarium for about 12 days. They may be showing a few knots, but she is a first time grower and can't tell, and I sure as hell don't know. Humidity is probably at 99% - the guage may be a bit silly, but there is condensation all over the sides and on the top window of the terrarium. The cakes get a good amount of ambient light from two windows in the room during the day. Fanning 2-4 times a day. Temp ranges from 70-75, and sometimes at night drops around 67-8 (because heating pad is used for temperature control, the temperature fluctuates - is this a problem?). Still no pinning, however. 2 other cakes were made crumbled and put in 50/50+ casings, and they are showing pins. She is thinking about trying the dunk & roll tek to at least one of the cakes. What could be going wrong?

Yup, dunk underwater in the fridge overnight (more than 12, less than 24 hours). Roll in fine verm (dont have to sterilize...I've had no probs so far). You'll get some huge ass monsters with that method.

I fan about every 2-3 hours.

These gents are spot on. The overnight dunk should do it. All your parameters sound good.

BTW fanning every 2-3 hours is over kill.....and way too time consuming...

never fanned sitting in a fish tank for humidity............



these get comp fanned 2 minutes every 6 hours .....

Give them a little more time though. My friends have seen cakes take more than 12 days. Sometimes the insides of the cakes aren't fully colonized (even if the the outside is) and require a little more time. But after your first flush, you should definately dunk and roll.

That's why it's best to wait 2 or 3 days after the surface of the cake is colonized to let it set into the inside of the cake.

So she's dunked one cake and left one undunked so she can do a comparison. The cakes were probably fully colonized - she waited a good five days after hte surface was colonized. Thank's for all the help... we'll post with an update...

Few days later, still not pinning... could it be that the humidity is *too high* and the cakes are getting rained on? She covered the top of the chamber in vasoline, if that even helps. Anyway, could excessive humidity be a problem?

That is over kill. Just placing a lid over any tank or fish aquarium should give you 95% + that is more than enough Vaseline is just a messy waste of time. In the mean time if you cant wait make some fresh jars .....
