are these fully colonized?

I followed Damions tek and made a couple of tray of coco coir and vermiculite. However, I cannot figure out if I should let these sit for a little longer or if they're done now. Can someone help me out?

I feel like the pictures make them look a little less white than they actually are. The whole surface is covered but it's not like a solid white brick. I am unsure of whether to proceed with fruiting or not and any help is appreciated. Thanks, sorry if this is a common question but I couldn't find the results I needed by searching. I started with popcorn spawned to 50/50 coco coir and vermiculite on june first. Today is June 17th.

50/50 is part of Damions name, his tek is more like 80/20.

I fruited 'em and they're popping up all over the cakes. So I have another question for you. After this first flush can I dunk my trays to replenish the water in them? If so for how long should I dunk them>
