hen of the Woods
    #1989547 - 10/08/03 09:17 AM (20 years, 5 months ago)

I found a 40 pounder the other day!

Maitake
Grifola frondosa
Maitake means "dancing mushroom'' in Japanese; in ancient times, people who found the mushroom were said to dance with joy because it could be exchanged for its weight in silver. Alternatively, the name may derive from the way in which the small, fan-shaped fruiting bodies overlap like butterflies in a wild dance. In the United States, they also are known as hen-of-the-woods because the mass of mushrooms looks like fluffed-up feathers. The stalks are often fused, massed at the base of stumps and on roots. They are common in eastern North America, Europe, and Asia. Maitake collectors always forage alone and never divulge the location of their treasure, even to their own families. In Japan, they traditionally mark their hunting grounds with hatch marks on trees bordering the trove and keep others out of their hunting areas.

Until cultivation techniques were devised in 1979, maitake was harvested from the wild. In 1990, Japanese cultivators produced nearly 8,000 tons of maitake, and production is expected to increase with expanding exports to the West.

Medical uses: Laboratory studies have shown that maitake extract can inhibit the growth of tumors and stimulate the immune system of cancerous mice. Human clinical studies of patients with breast and colorectal cancers are under way in the United States. In China, sixty-three patients with lung, stomach, or liver cancers or leukemia who took four capsules of maitake extract three times daily before meals for one to three months showed an ``anticancer'' effect. Reports that maitake extracts may help AIDS patients fight Kaposi's sarcoma and other symptoms are preliminary and require further studies.

Precautions: Little information has been collected concerning the toxicity of maitake, although some cases of allergic reaction have been reported.

Taking maitake: Maitake can be found in gourmet restaurants, dried and packaged in gourmet grocery stores, and increasingly in prepared products in the United States, Asia, and Europe. As a general health supplement, I recommend taking 3 to 7 g a day in tea or in soups and other dishes.

Me too, but not as big. It is still growing at the base of an oak tree, I watered it today. Right now it is about the size of a basketball.

Any suggestions on how to collect spores from it or reccomendations on starting a tissue culture.

I cultured stem tissue. If the "feathers" are thick enough, try culturing those. They are younger and further from the ground, thus cleaner.

The feathers are pretty thick compared to other pictures of Maitakes I have seen on the web.

I have been watching it grow for awhile now, a first I didn't know what it was. It looked like a wierd brain growth. I forgot about it and then about a week ago I went to check on it agian to see how it was doing, and I was like holy shit, a giant Maitake. Then I went to confirm the identity of it and found out that these things get really big in the wild.

Nice one !

I found a HUGE specimen yesterday but it's a bit moth eaten if you know what I mean. I don't fancy eating it but I've cloned it to agar for future projects

I've never eaten it before and wondered if you class it as a choice edible ?

Here's what I do:

Boil in water and vinegar using about 8 oz. of wine vinegar to a pot of water. Boil till the texture is to your liking but not too long. 10 minutes average. strain out all water and put into a large dish. Add lots of crushed garlic and olive oil, crushed red pepper, and whatever other seasonings you like. Do not add salt because it makes them mushy. Let cool and fill up the qt. jars with mushrooms and then fill with olive oil till the mushrooms are covered and let the air bubbles come to the top before you put the lids on.

Add salt when you serve....usually cold as an appetizer!

Enjoy

careful with immersed in oil mixtures!

They can easily cause botulism.

The acidity needs to be high enough (from vinegar) to prevent microbial growth.

Yes your right but 8 oz of vinegar to a medium sized pot of water does the trick.

drying goes well too for maitake
i started a tissue culture from maitakes from a supermarket and they are doing fine on dextrosewater , anemonelike structures
also easy to divide the mycelium , i use a woundcleaning syringe (wide mouth) to suck up a part of the myc and transferred it to millet .

Are you lot on about Chicken of the Woods ("Laetiporus sulphureus" also sometimes referred to as "Grifola frondosa")?

Laetiporus sulphureus (chicken of the woods) and Grifola frondosa (hen of the woods) are two totally different species.
