Freeze drying takes advantage of sublimation(Ice to vapor without going through liquid phase). After freezing the mushrooms you put them in a vacuum chamber and pull a vacuum as close as you can to absolute vacuum. Looking at the phase chart you can see that in a high vacuum water can not exist in liquid form. This means the water in the mushrooms can't melt and destroy their cell structure. The mushrooms dry without melting first. It's how they make astronaut ice cream. The cooler with the pipes sticking out is a cold trap, it condenses the vapor into ice again I'm using dry ice and isopropyl alcohol to reach -70 needed. I also have to you a desiccant to help absorb the vapor, I'm using DampRid in this case but I will soon be purchasing silica beads to use instead.
