When to birth? (PF Tek jars colonizing at vastly different rates)

First-timer colonizing B+ using PF Tek.

I've noticed that my jars are colonizing at vastly different rates between the 10 jars I've created.

My question is this:
Should I birth the jars individually as they are ready, or is it better to wait and do them in one large batch?



The jar on the left has fully colonized and I will now give it a week to consolidate, but the jar on the right will need at least a further week before it's at the same point.

A further concern:
I was told previously not to be worried about condensation in the jars over the myc growth, but there sure is a lot of it. I notice that where there is growth, the substrate has shrunk away from the edge of the glass, presumably as the myc eats up the nutrient contents of the substrate?

ya but keep track of the birth days and flushes with lil plastic sticks next to the cake so you know whats what
