When to fruit a casing.

A FOAF has a BRF cake he turned into a casing. He checked it after just three days, and it looks great! Which left him with two questions...

1) Why is the fuzz growing thru it so fast if there's no food to eat?

2) What percentage should be covered (with fuzz) before he fruits the casing?
