How to tell if cake is too dry in fruiting chamber

My friend has for cakes in a perlite chamber with air curtain. 3 of the cakes are on there 4th day one of them has one 1" pin. The others nothing. The fourth is 7 days in the chamber now with 0 pins. All four were dunk/rolled. Temps are 75 and hygro says 87 but the walls and top are sweating pretty good. He tells me that the cakes feel fairly dry to touch. When I did a search on this I found suggestions to mist untill pins develop, but his spray bottle doesn't give a very fine mist, so when he sprays,the cakes end up looking wet. Is this right or is here just being impatient?

if you dunked then they are plenty wet.
