well...
sounds kinda normal to me... although i did see you also posted about a nasty smelling jar at birth. im guessing your were told it was contamed and to toss it.
my guess was it was bacteria, and thats what your making is bacteria loaded cakes, forcing shrooms to pop out early.
other than that, its quite normal for a cake to pop out a few mushrooms while the 7 day colonization time after its completely consumed the jar.

That's impossible. Mushroom mycelium won't pin in a jar before full colonization.
Full colonization is defined as colonization of all available substrate. If part of the substrate is contaminated or otherwise unsuitable, full colonization is reached when the mycelium runs up against that barrier. RR

That means bacteria.

Why would you say that? they did great it was like I got two first flushes on them. When the ones that where growing in the jars mature the rest of the cake pinned didn't even have to re-dunk

Bacteria can hide well within the cake and still allow the mycelium to fruit like RR said once the wall of mycelium hits the contam it can either try to go around it or pull back (sorta) then go into a earlier fruting in order to try and get the spores out sooner to keep the cycle of the mushroom to keep going, its a survival thing.
