ok i posted a couple days ago saying i had a green mold in the jars. I was told the jars where not heated right and stuff wasnt fully killed. I had one jar that had a small spot of green starting but the other sides where pure white and growing fast. I knew there was no chnace if i left it alone so i heated my oven up and pulled out a rac. I sprayed bleach and water around, and in inside oven. flamed a spoon then cleaned with rubbing acl. washed hands all the good stuff. i breathed through my nose and opened the jar up. I used the spoon to take about about 1/5 of the jar all around where green mold was. there wasnt any but on outside and very small so i sprayed inside with bleach/water and put in a 10/1 of hydrodan proxide and water mix with a steraile needle around edges. i also throw in some table salt, and closed it back up. it has been 2 days and i dont see any green back and the good stuff is still moving fast on the other sides. i was wondering if it fully grows and i dont see green would it be safe to fruit off of or no?

i'm going to suggest as i have seen others do...
once the cake is fully colonised, break it apart and make sure that there are no contams on the inside.. oftentimes, some can go unnoticed in the middle..

sometimes you have to be ruthless.
i personally never try to salvage a jar thats come down with contams.
i know you _can_ sometimes get away without any negative effects, but overall, it isnt a risk i want to take. some of these molds that can grow are deadly, and are very toxic. as starseed said, jsut because it appears gone, doesnt mean it is.

an example: (sorry if this isnt even plausible to anyone) ..a jar comes down with a spot of black mold, you try to salvage, or do a grain transfer from the non-infected part. everything looks good, you birth it and break it open to check...a puff of black mold goes into the air and you're not wearing a mask. far fetched yes, but impossible? no

but what im saying is a tad hypocritical, as i do collect and save jars that come down with contams for a while, to see the progression of the molds or whatever the contam might be. things like that facinate me =/

Treat every unknown as if it were the cause of the black plaque and you will be very unlikely to make yourself sick. As you, I always take an extreme view when it comes to contamination. Very few people actually get sick from the stuff, and I certainly do not plan on being one of them.
