Shiitake Fruiting Conditions

All,
I have a few Shiitake sawdust blocks that were inoculated on Jan 11, 2014. I have no specifics on the strain other than the fact that it is categorized as a cold weather strain. Currently, all of the blocks are completely full of blisters. A few of them are showing some signs of browning. Being that they are all approaching two months, would you suggest I wait until they completely brown or should I immediately initiate cold-shocking in the bag and proceed to induce fruiting conditions? At the moment I am considering experimenting and applying different conditions to each bag but would like any additional input before proceeding. I've included a few pictures of one of the bags below.
Thanks in advance for any advice.

I would let them completely brown. The only time I strip them early is if they start to pin invitro.

^^What they said, and try to avoid any drops in temperature or they may pin in the bag before fully browned, which you don't want.

My shoe box tote Shiitake are fully colonized after two weeks. How long do y'all think ing will take for them to brown up?

If they brown in less than two months, let them sit at least that long after browning. I get best performance at 3 to 4 months before stripping the bags off. RR
