Freezing fresh mushrooms.

Instead of drying for preservation and thus losing psilocin content, would it be wiser to simply freeze wet shrooms to maintain higher potency?

Not higher potency. But not lose potency. And the amount lost is pretty insignificent.

freezing anything that is living or once living will damage it.

as for the contents, psiloc[yb]in break down under heat, not cold to my knowledge, so i dont think potency would be lost.

but like i said, freezing anything damages and ruptures the cell structure.
seems to me you'd either have to eat a rock hard mushroom, or deal with a big messy slime of mushroom tissue when it thawed. once again, i dont think it'd harm anything, but that latter certainly isnt appealing =)

if you got some liquid nitrogen I bet you could freeze it fast enough without rupturing the cells and keeping them in perfect condition.

shrooms wet, contain roughly 92% H20. freezing them fresh, like many have suggested would cause the cellular structure to expand, explode, and freeze. obviously when defrosted, you'd have a big slime goop mess.

I understand, but I don't think you understand. Extraordinarily cold, liquid nitrogen allows very rapid freezing of food items, resulting in minimal cell damage from ice crystals and improved appearance, taste and texture. Like in cryogenics, when you freeze people in hopes of reviving them in the future, you think they just stick the corpse in a SubZero with a built in ice maker? Nope, they have to freeze a body as fast as possible, because the faster the freezing, the smaller the ice crystals, so small that most cells aren't damaged in anyway.

dont freeze what they say is true, you freeze you get goo ive seen it done, then people rying to eat suck, i laughed and they gaged, heh dry the mofos out

This isn't so. Liquid N2 would certainly freeze your mushrooms quickly, but the cells would still rupture, and while the frozen mushrooms will keep well, when you thaw them, they will become a nasty, useless mess.

When N2 is used to freeze people, the process actually takes a couple of days such that the freezing process occurs very SLOWLY to reduce cellular damage. Furthermore, the body's blood is replaced with a form of antifreeze before the procedure is started. Even with all these precautions, extensive cellular damage is caused by the process.

Don't freeze fresh mushrooms. It won't work. The best you can do is freeze-dry them with expensive equipment, but in that case, the water is sublimated out of the mushrooms as they freeze, thus avoiding the cellular damage. Unless you have this kind of equipment, the only thing you can do is dry them cracker dry, then freeze them.

Mycelium will survive freezing, but it won't be happy about it and will take a while to recover. Freeze-drying, however, would definitely kill mycelium.

Oh, and by the way, a mushroom Popsicle would still have to melt into a disgusting glop in your mouth when you ate it. [gag]

So how come frozen dinners that have like sliced mushrooms in it aren't mush? Anyways, after you freeze it, why even bother to thaw them?
