Aminita muscaria
    #1963382 - 09/29/03 06:30 PM (13 years, 8 months ago)

This is an A. muscaria coming up through a footpath. Those lumps had fruit pushing them up.

So, has anyone ever eaten them? (in a culinary fashion).
David Arora reckons they are safe if cooked.
But do all the 'toxins' break down with heat?
Ive heard they are tasty but Im quite fond of my liver...

Yes, I did.
Slice them in thin slices and boil them in water twice for 10 minutes discarding the water. Then use as you would use any other mushrooms. They taste quite good.

Here?s an excerpt from a correspondence with Peter Gray:

"The basic method is pretty simple. First we cut the A. muscaria caps into slices about 5mm thick, and maybe split the stems in half or so. Then boil a big pot of water and throw in the mushrooms. Boil them for about 10 minutes; more is okay. Then throw away the cooking water, and drain the mushrooms well or even rinse them once. Finally, saut? the mushrooms in a pan, adding olive oil after a while, and chopped garlic if you want, when the mushrooms begin to turn brown. Of course there are many possible variations.

We have found that when we tried a shorter boiling time of 4 or 5 minutes, to preserve some of the red color, or when we used an inadequate quantity of water, we experienced a brief and fairly mild nausea a couple hours later. That seems to indicate where the limits are. And, who knows how different individuals will respond? As with many mushrooms, I suspect it would be wise to err at first on the side of smaller amounts, more water, and longer boiling."

I had a lot of experience with Amanitas about 20 years ago -- we collected a refrigerator full, from San Andreas Lake, and took many voyages. Now, my memory of these long forgotten times is quite hazy, but I seem to remember eating some stems raw -- straight out of the fridge -- and thinking that they had a taste and consistence of cold, potato, hash browns.

However, I could be wrong, so could anybody verify this? I'm old, and have taken a lot of drugs, and my memories of the late '70s and early-'80s are kind of sketchy -- I also seem to remember something called "disco," and that people used to think cocaine was a wonder drug without any negative side effects...

PS: I thought the Amanita experience was actually pretty cool, and different, but that it was also really, really, hard on you the first few times, so after having explored it pretty much, way back when, I'm not sure I'd personally go back to the same well...

Edit: After re-reading this thread, I just thought I would add that, generally, we cooked them in water to make a tea, and then drink the tea, so if you did this, and discarded the water, then you would have probably removed the muscarinic toxins from the mushrooms, but I would think the taste may also be diluted as well...

I ate them also, boiling in 1/2 gallon of salt water for each mushroom, draining and then saute. The caps are good, I didn't like the stems.

But do all the 'toxins' break down with heat?

Nope but the ones in muscaria are water soluble.

Heating actually changes Ibotenic Acid into Muscimol: which is psychoactive.

If you want to eat them only for "culinary purposes" then you boil them to remove most of the Ibotenic Acid and Muscimol.
