damn green mold

i recently saw a little green speck on one of my jars, so i took it out and cut away the green spot with a sterilized knife and then placed it back into the jar. came back like 5 minutes later and where i had cut it out it had turned green all over!! 4 out of 5 jars had greeness on them and the same happened, except i didnt put the others back into the jars thinking that maybe that was my problem, but it happened to all of them. any one got any clue what is doing this? i mean where i cut the cake, it produced more mold!!! WTF!!!!!!! thanks

It's possible that the contam was already there in more places than the one green speck you saw, and the fresh air exchange gave it a boost to produce more conidia [spore bodies]. Both Penicillium and Aspergillus are white when they haven't started producing these, the green color you see are packs and packs of fruiting structures. Most of the time these molds start sporulating so quickly that the molds appear 100% green even when small. But you can definitely have very light sparse growth of an Asp/Pen mold and not even know it's there. Based on what you said, the timing etc., odds are that the mold was already there to a greater degree than it seemed, and jostling it around was a favorable event for the little baddy.
