How do you guys not get burst rye kernels when using RR's method?
    #19502581 - 01/31/14 06:14 PM (10 years, 11 months ago)

This is literally driving me crazy, I follow the prep method to the T, over 12 hour soaks in HOT water, with gypsum, boil it for exactly 10 minutes, steam dry, and still get about a 50-100 burst kernels every 7 cups, and that's AFTER picking out all the cracked/chipped grains before the soak, should I boil it for less time? It doesn't make sense, every single time there are burst kernels. I'm guessing it's either the rye that I'm using or the temp on my stove which is a portable electric stove, but I can't go much lower otherwise the damn thing won't come to a boil. I have some jars colonizing successfully but I just wanna get over this burst kernel thing so I'm not wasting half an hour of my life picking them out every time. Any and all suggestions are welcome!

yeah that's what I'm guessing, I'm gonna need to figure this out one way or another, gotta do it through experimentation I guess, which probably means more lost grains and money lol

I boil my rye for 20+ minutes usually after a 12 hour soak with the gypsum. Never had a problem  There's not enough burst ones to matter.

That is strange...what setting on your stove do you start and finish at?

gas stove, not a roaring boil but not quite a simmer either, it's on maybe like 1-2 for a small batch like 4 cups dry or 4 quarts prepared or a 2-3 for a double batch.

I'm definitely gonna try to do it on a lower setting next time, mine always ends up boiling pretty hard

I don't think most people stress over 1% burst grains, what exactly is your concern with the burst kernels?  You think it'll contam?  I haven't found that to be the case.

In no expert by any stretch, but I found that a for burst kernels, the big problem seems to be that the grains really stick together.  (I've had mixed results with whole brown rice--and the kernels really like to burst if you're not careful).

I don't remember where I read it (Violet's grain tek maybe).  But I got the feeling that the simmer/soak was to hydrate the grain.  You're still going to pressure cook the grain in the next step.

Anyway, if you get a handful of burst kernels and it's not turning the jar into a clump of glue, I don't think I would sweat it.

Whats wrong with having burst kernels?  I always get them and my myc grows just fine.

And it doesn't stick at all.

I boil until i see a couple of burst kernels, add cold water and then soak.  The next day I will heat it up again and rinse off to let them steam off.  I dont have many failures.

I also bring it up to a boil slowly, often times it takes 20-30m for the rye to come up to a boil when I put it on the stove.

If you're really having problems, just soak the rye, bring it to a boil and drain it immediately. Inoculate and when it comes time to spawn, try FH's grain dunking TEK.

i recommend common sense and figuring it out.

These are the TEKs I use. They're all as cheap and easy as possible, just like your mom.
