Mono tub beginnings. Is this correct?

The last 3 tubs I did, 2 contaminated. I was told to fold the trash bag over the substrate, Not the top of the tub like I have In this pic. I think that the last 2 tubs were too wet. So I figured this way they might not stay so damp initially. Also, I squeezed about a cup of water out of the substrate before spawning tub.
Did I do the right thing?
Just sick of contams.

Hydrate to field capacity, pasteurize and mix.
If you do not know what field capacity is, use the advanced search and check the TC box and the only show one result per thread box, also filter the results for the last few years.
You should cut the liner at substrate level and have no overhang onto the substrate.
How are you prepping the substrate and what kind of spawn are you using?
Also your holes look way too big.

How did you pasteurize the substrate before putting it in the tub? If you were to squeeze a handful of substrate lightly a few drops should come out, and a hard squeeze should yield a small quick stream of water.
And I can't say I have ever seen a trash bag liner quite like that, but I don't see any reason that wouldn't work.

I'm prepping the substrate by mixing coir and vermiculite in a large bowl. When I squeeze the sub a few drops come out. Then I pasteurize at 140-160 degrees for 1.5 hours. The spawn is bird seed. The last 2 tubs I did like this only colonized either half way or not at all over a period of 8 days. As far as the holes being too big, I have a tub with same holes and it's fruiting like mad. Why would I cut the trash bag already? I literally just spawned it today. Doesn't it need to be in an enclosed tub for about a week before cutting the trash bag??

First few times doing coir it can be hard to estimate what field capacity really is. I know the first couple times I did it I made it way to wet as well. I recommend following a tek to the T the first couple times until you're confident on what field capacity really is. It can be easy to add too much water.

Because the whole point of it is to line the tub where the substrate is, not all the way up the sides of the tub.
The sole purpose of using a liner is to prevent side pins from forming.
This happens by the plastic liner sticking to the substrate as it consolidates and shrinks and pulls away from the tub walls, stopping fresh air from hitting the sides, and eliminating the microclimate that side pins love.
If you wait until full colonization before trimming the liner, you could very well cause a separation between the liner and the substrate, meaning you just wasted your time utilizing a liner in the first place, because now air will be able to hit the sides of the substrate and cause pinning.
The bag is not what is keeping the tub sealed, the taped holes are.
If your holes are not taped up, you are already messing up lol.

 I didn't actually zoom in the pics. Those holes are way too big. Tape over them until fruiting anyways. Like he said cut the bag liner at substrate level. Less translucent bags (black bags) work better to eliminate side pinning as well.

This has been discussed indepth...
Main pinning triggers are full colonization, FAE and Evaporation off of the substrate.
Light is a secondary pinning trigger. For tropical species temperature is not a pinning factor.
Some people use clear bags as liners, so that the sides of the substrate can derive energy from the light, while at the same time stopping fresh air from hitting the sides.
Many people have taped their tubs and still get side pins, because light is not a main pinning trigger.
Mycelium should be exposed to ambient room light from day of inoculation as has been known for many years. Light is not a pinning trigger until after full colonization and an increase in air is given, and even then it's a secondary pinning trigger. RR
