What kind of fruiting chamber are you growing those in? They look like they could use a bit more FAE

More air is in order. I know folks always say to start with oysters. Admittedly they are easy to grow but it is not easy to get the right environment dialed in. Easy to grow but not so easy to grow right, if that makes sense.
Fourth pic...is that a shiitake?

It also looks like you took the bag off of some of your logs. That's fine if your just looking to get one flush but makes subsequent flushed more difficult and prone to contamination issues.

thru natural selection, only the mushroom cultivators with the greatest attention for detail can survive, for only those cultivators are able to spot a contamination early on!

looking good. look like grey oysters.. have been doing them myself... upping the FAE will give mush bigger mushrooms with relative bigger heads and shorter stems... in the beginning mine looked like yours, slim and long. if the heads are dark, almost black, definitely CO2 concentration is to high. more fresh air will color the heads to a more light grey collour. after upping my FAE they become so much bigger. today harvested a grey oyster mushroom of 80 grams single ones... !!
how do you steralise/pasteurize your substrate and what suplements u use?

heyyy thanks so much for your feedback I was a bit busy getting my flowhood going now that i did and innocculated a bunch of jars tomorrow I will be working on the FAE for the fruiting chamber i currently just have a exhaust fan that is basically doing nothing since no new air is entering or leaving the actual room ...
the following is how the room is setup
the fruiting room is about 1 meter away from the nearest window it is plastic walls and ceramic ceiling/floor next to it is the flowhood seperated by thin plastic walls sealing them from each other i was planning on using exhaust pipes that push fresh air in from the outdoors and let stale air out what do you suggest ... do i need small fans that circulate the air in the room itself (and) a single strong fan the pushes air out which would force new air in thru a hole or do i need 2 fans one in one out?
substrate is simply wheat straw / gypsum / wood shavings /sawdust I mix em all up wash/drain then soak in soapy water for 2 hours then drain and re add water and boil once pasteurized i bag em and sprinkle fairy dust AKA grain spawn
please give me more criticism I'm goin to my grow room in a minute will take pics and show you what i mean

this might be a very helphul link, about oyster cultivation and amount of co2/FAE and temps with picturs on how it effects the mushroom. with this you can very clearly see what you could improve. was very helphul for me. i use also light, 800 lumen, 3500K. i dont have so much mushrooms but the grey oysters grow 20cm in length and up to 80gr each mushroom. uge!

my FC is only 180*100*50 i use computer fans for FAE. 15 min every 3 hours, one fan blowing fresh air in, one fan sucking air out. i think this way the air in FC circulates. i dont have a fan inside the FC but i think with bigger FC that could be good as well. Fans are cheap and dont use much energy and lower co2 concentration during fruiting for sure will give you much bigger and more beatiful mushrooms.
how long do you pateurize the straw? i have to build myself something to prepare more substrate as my pressure cooker only handles 5kg at a time...
