Hey folks,
Been reading up on distillling moonshine when the thought occured to me about maintaining a desirable yeast culture. I know it's just too easy to buy more already prepaired yeast, but I'm interested in a more self reliant appoach. Links, descriptions, what ever ya got. Thank you.

You can culture yeast on agar plates or slants, and then use them to create a starter culture before adding them to whatever you want to ferment. slants keep a long time in the fridge, and a single slant can be used to create a huge number of additional slants to keep a culture going. I think yeast and distilled water can be frozen without killing the yeast for even longer storage. If you don't have a good way to preserve a single strain you can just use natural yeast. People did this all the time before they even knew that yeast was responsible for fermentation. Yeast is present in the air or on the surface of fruit. Not very consistent though, and not guaranteed to have the same alcohol tolerance level of actual distiller's yeast, which would mean lower yields of moonshine due to unfermented sugar in the mash. If you are making new batches pretty often i suppose you could just add a bit of the old (undistilled) mash to the new batch to keep propagating the culture.

I've been able to just keep transferring a small amount of fermenting mixture to keep a culture going. If you're always brewing something that'll work fine. I think you can use spent yeast cakes for the same purpose.
If you're looking to store a culture for a longer period of time then agar or something else might suit better.

I have just been keeping a culture going in my fridge on sugar water. Its just a jar with an air lock on it like this:

Just use 1/4 of it to make a starter culture and refill with sugar water. As long as you use it and refill with some sugar water now and then you could keep it going forever.
Is there a moonshine thread on here? I am sure I could give some insight and good information on neutrals.

Just use the lees from your old mash to start your new one. This will work 5-6 times before you deplete all the nutrients in the yeast packet and need a new starter.
