Inoculation question

Does a cake need to be fully white, or can it have some substrate appearing?
I've got some cakes ready soon that have black shards of vermiculite stick out and other various things that in my mind, I don't wanna confuse for a contaminate.
This picture was taken roughly day 6 - 7, they are now roughly 98%, rather than 60% at day 12.

damn day 6 or 7 for that? r u using LC? id say it has to be pretty white all over, maybe some parts are "dusted" with whiteness... but when it hits 100%, wait at least 7 days (more is better) to let the middle consolidate. sometimes with grains the "dusted white" look is more apparent, but with BRF its pretty white  the jars on the right are rye grain have as u can see some grains have that "dusted white" look more than others, the jar in the middle is BRF 5 days past 100% and it looks pretty white, dunno if that helps?

do u have a more recent pic? are u using a top verm layer?

Correction, 5 days in that picture was taken,
*EDIT* Inoculation was done with live culture, and unfortunately I did forget to add the dry verm layer, but have been keeping them in coolers, so far it's not showing signs of being slow in any way? Seem on time, if not a bit faster than typical methods (I would assume)?
I left one out of the inoculation procedure to later compare it with the others (below):

I was curious about the picture below, parts like this, if they don't cover, is that a problem?

its a bit blurry, that last pic. the 2nd pic has that surface that is exposed, does it still look like that?

All of the jars unfortunately have that gap inside the jar, as I was too excited and skipped the step but no problems seem to have occurred.

Which step are you referring to when you said you skipped one? Do they have a dry verm layer? The cakes will naturally shrink in the jar as they get close to being ready to colonize. You should be careful when, or not handle them much, so you don't disturb your dry verm "filter".
The gap is normal. I have been using those same jars (tall 1/2 pt.) They are the wrong ones, yet they work. They work better if you "neglect tek" them for the first couple of weeks, otherwise they can become compact on the bottom and stall out.
Unless they are starting to pin invertro, leave them to finish colonizing/consolidating.

There is no dry layer of vermiculite, all jars were filled with just substrate. I did this to see if I was vulnerable to contamination as a novice practice and found none of them to be contaminated.
I'm a tad worried though, but not entirely, but here's my question:
If parts of vermiculite and/or brown rice flour are stuck to the glass, can mycellium still cover it? or will it go behind it?

Fully white +7 days (broken record).
I've had jars that refuse to colonize the last little bit at the top (only happens to me when I did big 1 pint jars).
After I birthed and rinsed them under the tap, if I couldn't rinse the uncolonized chunks off enough, I'd use a alcohol-sanitized guitar string to slice off the hunk that isn't colonized enough, just like a hunk of cheese. Everything went fine. That's just what I did. 
The material stuck to the glass will become part of rhizomorpic growth, but can sometimes just remain an uncolonized smear too. That's why it's important not to disturb the jars and shake the dry filter on top too much so pieces don't slip down the sides.

I birthed a few cakes, they were ready at day 14, so far they have pins forming, I'll update when I can get a clear picture, approximately 2 more days, maybe 5.

You're correct!
Give them some air once and a while in a sterile room and they'll colonize just nicely, and best of all, you can smell a contamination almost right away.
