Pasteurizing Horse Manure

Hi all, im following RR's vids in terms of pasteurizing horse manure. I Boil my 6 qt jars until the meat thermometer in one jar says they're at 140o then turn off the heat and let the temp climb. However my temp seems to climb to about 190o or so then will stop and come back down. Is this ok or is it important not to go over the 160o mark?

Get two thermometers one for the water one for the jar once the water temp hits 165-175 turn down water and monitor temps this should keep the temp ideal

The weird thing about most candy thermometers is that they say "Do not immerse in water". I could never figure that one out.

You can go up to 165F and then turn off the heat.  You will climb to about 195F, as long as it doesn't go over 209F for more than 20 minutes or so you will be fine.  The target is 170F for 1 hour.  Over 200-210 really excites certain thermophillic bacteria that you don't want.  The target is to hold 170F for one hour.  It seems you are already on the money.  You are perfect at 140F.  You might want to consider using spawn bags to pasteurize your compost instead of jars, they are easier to use and can be re-used without having to clean them.

op you don't want your sub going over 180, just shut the stove off before 140 and aim for 140-160, you wil figure out what works best on your stove after a couple runs. i can pretty well do mine w/o a thermometer these days
