Why would it not smell like coffee? You put coffee grounds in there

Make sure to pasteurize properly. Maybe throw a little bit of hydrated lime in there too, coffee likes to grow molds pretty easily.

I like soaking my grains 24hrs in 1/2 coffee 1/2 water and gypsum added to water. Then after 24hrs I boil grains for 10 min then strain, slight cool down for proper feel then Pc it. Then did a test with grains with coffee water and grains without coffee everything else was the same. The coffee grains have taken off faster then the grains with no 24hrs coffee soak and therefore finished 3 days sooner. Coffee is great if used wisely...

Coffee is great to add to your grain soak, it does speed colonization.

But the OP was talking about using spent grounds in his bulk substrate.
