Cakes started fruiting but not 100% colonized! What to do?!

Hi to all!
I hope you're having a good time.
I really don't know what to do, please help me!  It's my first successful cultivation... (to date). Maybe too successful.
My cakes (well, not really cakes, my substrates in a sterile environment) are being colonized by mycelium since about a month.
I had the plan to wait for the cakes to be fully colonized before taking them out of their sterile bags and put them into a fruiting chamber...
The problem is they grow big shrooms at the moment, but not all the cake is colonized. If I take them out of their bags I suppose there is a huge risk of contamination. But I can't let them stay in those bags, the shrooms will feel confined in those small bags!
And I already waited for the cake to be fully colonized but it seems it will never get to that...
Please see picture below.



As you can clearly see there still is some non-colonized places on the cake. Please help me! WHat sould I do?! Thanks a lot!

There's no problem let it fruit invitro and get some out of it. Pinning before full colonization could point to contam tho.

Thanks for the answer.
Okay, cool so I can let them fruit into the bags... But what to do if the shrooms become mature and I need to harvest them, but can't open the bags because the substrate is still not 100% colonized?

If the fruit is fully maturing before the bag is ready to be opened there is prolly something gone wrong to force it to do that. If you could get some brighter pics more close up we could see.

Because I'm starting (and my first attempt got contamination), I purchased those pre-sterilized bags all ready (good moisture).
I inoculated them and they are in a warmer see-through tub since (it's 66 degrees F where I live).
