Are you sure you don't have it set to Canadian or British English? I had both keyboards loaded on my iPad for some reason, and it is fairly easy to accidentally switch and I end up having my American spelling autocorrected to British spelling.

I ALWAYS fuck up "definitely". I can spell almost any other word perfectly though. Oh, and sometimes I type "the" instead of "they".

"I before E, except after C" has a lot of exceptions, but it will help you spell basic words like "believe"

I think I remember hearing it has more exceptions than words that actually follow that rule... But I never really payed much attention.
