2-row (brewer's) malt - Is a 24 hour soak necessary??
    #19390922 - 01/08/14 10:13 PM (10 years, 22 days ago)

Hi there,

I happen to have lots of 2-row malt laying around from brewing, so I've successfully been using it as a spawn substrate. I've found that with these grains a 24 hour soak leaves them too wet; they absorb water very quickly. First I rinse the grains thoroughly. Next I immerse grains in fresh water in a pot and bring water to a boil, then I drain the water, and repeat the boiling process two more times. Then I let the grain steam dry and let it sit for 18-24 hours before pressure cooking so as to germinate endospores on the grain.

I am curious whether the endospores would not germinate as well on hydrated grains versus in submerged grains? Furthermore, I'm curious as to whether attempts to germinate endospores are unnecessary for brewer's malt, being that it was soaked for ~40 hours during the malting process? (malting consists of hydrating grains for ~40 hours until they germinate such that starches are converted to sugars, then the grain is kilned at relatively low temperatures until dry (for malts such as 2-row)

we don't soak to germinate endospores we soak to hydrate, endospores will be nuked regardless
