a 17 qt works fine for one quarts-and it holds 3 quart and a half. just go for the cheapest one that can maintain 15 psi that comes with a pressure guage on top (obviously). i have an All American model 910 that does just what you need. it also has an emergency release valve so it wont blow up in your kitchen it will just pop the valve-definetly the best way to go with all those features. also the seal it makes is metal to metal so you wont ever have to worry about gaskets and such=these are things that you should look for in a canner-good luck!! I got a nice one from the local discount store for $70 US. I think it's a 21 pint. It hold 20 pint jars and 7 quart jars. It also came w/ a buch of cool shit like a funnel, jar grabber, etc. Killer deal, I think. Look around in your area. The bigger the better, provided you can get it up to pressure on your range; cause trust me, after the first time you use it, you'll want one twice as big no matter what size it is!
