Need Opinions - How are these looking??

Ok all mighty gurus of the tek ... it's been 21 days. Followed PF Tek using the 'wrong jars' lol ooops - inoculated 12 with Penis Envy and 12 with B+ on the same night. All are in BRF and sterilized beyond belief - I may have sterilized MYSELF in the process. Put away in a dark closet, untouched and kept at 75-78 degrees the whole time.
They are started growing fine, and boom the past few days, knocked themselves right out of the park. SO the questions started - and I searched already, but I'd like some expert views on the pics I took.
For one, the Penis Envy *looks* like it is almost there - the bottom and sides of all the containers look like the ones in the pictures. Final coverage of the bottom was yesterday and today, so the question - those are 1/2 pint jars, not the short wide mouths, the tall ones. When are they ready to birth? am I looking for pins? how do they look health wise?

SOME, just a few, including those that have colonized what I think is completely, have some drops of water on the sides (not collected at the bottom) It is just a little, and well below the dry verm layer - is this something to consider? or maybe just cut back on the water a bit next time?

Finally, the B+ ... same thing, a few water drops on the inside walls, nothing collected on the jar bottoms and the verm layer dry and untouched. It seems the B+ is actually a few days BEHIND the Penis Envy?? is that correct, does it grow slower? same inoculation date, same storage, treatment, jars, and BRF. Just curious.
That being said, same idea - they blossomed and filled the jars quickly, so I expect the bottom to be colonized in the next day or so - can you look and tell me how they look?

Same questions I had with the PE - am I waiting for pins to show through the glass? should I wait another week after everything is populated, like I would with the short wide mouths? Basically, I want to do this right - I took the time to read my ass off, pissing off the wife on more than one occasion waking face down in my iPad. SGFC's are ready, as is lighting, etc. etc. - just trying to figure out if things look *right* and when the right time to birth these is - it seems there is a lot of conflicting information out there (or I just got plain dizzy reading it all)
ANY feedback to this noooooooob is appreciated - Thanks!

BTW looking again, the *jeweled* effect of the decorative ball jars isn't helping point out the moisture - it looks more prevalent than it is to the camera due to the glass design - moisture is there, just not as much as it seems in the pic. Basically top and bottom is dry with no moisture visible, verm is dust dry on top - just a drop or two on the sides here and there. I wanted to clarify that, so I got the best possible fit for an answer.

You don't need to wait for pins to show, but yes to giving it a full week after you think its 100% colonized.
I've knocked up 12 jars of B+ at once, some just go slower than others even side by side in same conditions. As long as it is still showing growth its fine.
