My first cubensis - need advice

Hello,
I'm growing some Ecuador girls using corn tek, it's been a month or so and the jars are pretty much white. The bottom of the jars is still yellow - mycelium didn't colonize it, so I need your assessment in calculating the time remaining to go to pinning stage. I want to do it on coco coir/verm combo without casing and need them to get to 100% percent of colonization. Do I need to wait to jars coming to stage where no single grain of corn is visible or can do it earlier?

How long has it been uncolonized? Did it stall there. I'd wait a few days. Worst case you can get rid of the uncolonized part.

Everything was fine during the whole process, I shaked it only once on 25% colonization, it reached this much colonization 2 or 3 days ago, everything looks fine, even the inner top is staring to white, only what I see uncolonized is the thin bottom inner layer of corn.
BTW, when I am transfering to pining containers, can I do it with 1 milimeter thick 3 centimeters (1 inch) long needle, will it pass the myce through or is there better (more efficient) way to transfer?

Someone said to me he does this with syringe and needle although It sounded awkward a bit from the beginning. If I can touch it, what about contaminations?

When its fully colonized its very resistant to contam.

If there are fruits already growing on the cake, the fruits are fine but throw out the cake after that flush.
