Nameko on pure grain. Damn thing was supposed to go into sawdust spawn but it fruits soon fast.

Nice, I have a few jars that just reached full colonization, I'll be spawning them to sawdust blocks probably Wednesday. I love nameko, I was spoiled while I was in Japan. So I'm hoping my sawdust blocks fruit up well.
What strain is that? Mine is Jeff from mycoteks strain

Anybody got a fave way to cook them? I sautéed in a bit of butter but they weren't that great. Maybe in soup?

It's a pretty general purpose mushroom though, looking at the pictures you posted I'd say they're a bit ripe. You want to pick them when their cap hasn't gone concave. Look up pictures of nameko and you'll see what I mean.

That fast? My Nameko takes at least 2 months on sawdust to fruit...

I haven't eaten these yet. I have a few bags cooking along so hopefully soon. Looks like you have a pretty aggressive strain there AV.

I heat up a skillet with a bit of oil until just smoking hot and give them a good sear and hit them with salt and pepper. When you get that good caramelization you bring out the full flavor potential of any mushroom. If I've never tried a species before I do the same then add about a 1/4 cup water to deglaze the pan and let it reduce until its almost gone. Gives you a good caramelized full flavor mushroom with a bit of its own broth. Good stuff on the grow. I like these. What were your growing conditions? High humidity? Cooler temp I'm sure?

Mine took at least 2 months to sit there and dry out and not do a f'n thing...

Colonize at room temp then cold shock for two weeks and they will fruit right in the bag. Those got cold shocked by being left in the store over the holidays with heater turned to 50 degrees. It is a good strain though. Very quick to fruit.

Mine took about 6 weeks to colonize before I started seeing the brown slime patches form. That's when they would go into fruiting. I only cut the top of the bag open leaving them realatively covered. Took about another week until pins started forming then another week to harvest. Temps in the 60's-50's at night and RH high at about 95%-99% when fruiting to keep them nice and slimy.

Nice grows guys.  I think the lack of humidity was what killed me, should have left it in the bag longer.

Yes. Let them pin in the bag but gotta watch them close or they will quickly pass. Had them again tonight in soup and they were excellent.

I was hoping to be eating these soon but just spawned a couple days ago :/ How come some people get the bigger oranger caps while others get the tiny yellowish ones? Is it strain or conditions.
