Probably my favorite local brewer. Consistently pleased with the quality they put out. Ninkasi, too. God bless Oregon beer.

I've been fairly pleased with every brew by Ninkasi that I've tried. Tricerahops was particularly outstanding. Stellar IPA, though I question the "double" IPA label as being inaccurate. Polished off the decent whisky last night. Glenmorangie's Lasanta. Not terrible, for fifty bucks. Still debating my next purchase there.
e: Bell's Hopslam probably still reigns as the double-IPA king, imo.

Double is dumb IMO, I call them Imperials, and at my discretion My favorites are 9-10% (Sierra Nevada Hoptimum, Founders Double Trouble, Green Flash Palate Wrecker), most others drink like "single" IPAs to me So depending on what you mean, I might agree 
Hopslam ships out to my state next Monday If you get it in OR, it ships out the 20th 
You ever drink Bulleit rye or bourbon? Always great IMO. As for scotch, Glenfiddich and Glenlivet 12s are always ~$50; tomorrow I'm gonna have some Glenmorangie "Nectar D'Or" finished in bourbon barrels

Yeah, Nectar D'or was pretty good. Lasanta was finished in Spanish sherry casks, added a bit too much of a sweet note. Still not bad for the price, though I'll likely just go back to standard Glenmorangie 12 if I want a Highland single-malt for cheap in the future. I'm not overly-fond of Speysides; normally label myself as an Islay or Highland man. Will be picking up a bottle of Bruichladdich's Octomore in a week or two here.
Double or Imperial just refers to the IBUs/hop content of the brew to me, nothing rigid. It's one of those definitions that, being fairly new (double-IPA), is still finding its niche in the world. Right now it's just really hoppy, bitter, high-ABV beers. Tricerahops certainly enters that territory, but I wouldn't put it up there with Maharaja or Palate Wrecker. Good beer, regardless.
As for Bulleit; not really a fan of bourbons or American whiskies in general, though you could do far worse than Bulleit. Try Elijah Craig 12yr bourbon, for a treat, if you get the chance.

I still have some Lasanta because I thought the same thing, a little sweet for me .
And I'm the same way, Glenmorangie 12 is go-to for highland 
Double/imperial technically refers to the malt; there are a few 5-6% 100+ IBU IPAs. Yes, they're really bitter, but with a cleaner and lighter (i.e. less noticeable) malt than american barleywines. (which I'm a huge fan of fresh). They (impy IPAs) have the potential to be "easy drinking barleywines" if done right IMO; perfect example being Hopslam 
I also forgot to mention,

Best part of Lasanta, to me? Smelling it. Man, did it smell really fucking good. Also contemplating a bottle of Bunnahabhain 18, if I can hunt one down.
My normal brick-and-mortar store has a bottle of Macallan 25 anniversary bottling that I've got my eye on, but I think my wife would murder me in my sleep if I dropped that kind of cash on a bottle.
