So I want to fight someone. What can I do/get him to sign or whatever to make it so he can't press charges?

Take him to a boxing ring and get him to sign a release, releasing you and the gym from any damages that may come from your "sparring session".
Ultimately it's going to depend on your state laws, but the above would apply to the vast majority of them.
If he signs a release prior to a backyard brawl or something, some states might prosecute you for running an unlicensed boxing/mma event, and maybe even assault if they found out.
Of course the easiest way would be to get him to take a jab at you in view of the public/cameras, because then you could whoop his ass and claim self defense if he bothered to press charges.

engage in mutual combat. basically you agree to fight and pay your own medical expenses, should you need any. I forgot the wording, but its something... lol [unhelpful]
if he has it com in' beat his ass anyway. punch him in the liver a few times. no bruising

That depends on local laws.
In Seattle, two people can agree to fight as long as they don't do it in a dangerous place like the exit of a building. The assault laws there don't apply if both parties consent to the fight.
