How thick must my mycelium be? (Pics)

Sup! Ok so at this point with my first grow attempt, got a considerable ammount of mycelium in my inoculation jars....I'd say ranging from 60-90 percent covered in the different jars My first question....when determining when the jars are ready for fruiting chamber, how much mycelium is enough? For instance I have a jar that's about 95 percent covered, but can still see a few small areas of the substrate around the top of the jar....would these be ready for the Fruiting chamber? Or does it literally have to be 100 percent covered? Also how thick should I wait for it to get? Lastly, I had moved my jars from one area to the next and since I did that it seems the growth has slowed down or even come to a halt so I moved it back....but, any tips on how to accelerate the growth, or ideal growing temps and conditions? Any of ur personal tips are appriciated...! For the record I'm a huge mushroom enthusiast and have great respect for them and have for many years, just a noob to actually producing them myself. Just wanted to throw that out there!

not much now tell me what type of jars your doing but either way they should always be 100%, if it cakes the dry layer at the top doesn't count

It needs to be 100% colonized. Then let it consolidate for a week so the mycelium can 'digest' the substrate.
If you birth before 100% colonization and consolidation you open yourself up to contamination.
If your growth has completely stalled you can try flipping the jars over.
Edit: Ah, good catch on that cronicr. Yeah the dry layer on top of a PF Tek jar doesn't need to be colonized. After the brown rice part is fully colonized you should wait a week.
