Reishi tincture help

Ello!
So, I need a bit of help with my Reishi tincture. I started with appx. 4.5 oz of outdoor Reishi. I simmered it down, filtered it and it yielded a little more than 1.5 cups of liquid. I'm trying to figure out how much should be a dose each day and what everyone recommends.
After I strained it once, I put the mush in a jar and filled it with white vinegar to do a double extraction. I know it isn't as ideal as vodka, but it was all that I had and I can't put alcohol in my body for various reasons. I'm letting that sit for about 2 months, shaking every few days.
I tasted about a teaspoon of the water extraction and it tastes EXTREMELY potent. Any guidance on what would be a recommended starting dose for the 1.6 or so cups out of the water extraction I have? Also, should I store it in the fridge, or just on the table?

I'd probably dose like 1-2ml/day of that strength of tea. You're going to have to freeze it or it will rot since you have no alcohol in it. It'll be good for only about a week to ten days in the fridge. Maybe dilute it to a quart or so of liquid and make ice cubes for dosing? The vinegar might preserve it, but if you're soaking the mushrooms in vinegar for 2 months the tea will rot long before that.
I've never heard of using vinegar instead of alcohol. I'm not 100% on this but I'm fairly sure vinegar isn't going to dissolve the alcohol soluble terpenes, although I'm sure you'll get something.

I have 2 jars, one with the vinegar extraction sitting in the cupboard, then the other with the finished 1.5 cups of water-extract Reishi tea. Both from the appx. 4.5oz of Reishi.
So I guess the best thing to do is add water to the tea to make it about 2mL per ice cube... or just use a pippette to add 2mL in each cube tray then fill it with water and freeze the rest of the mixture until I'm ready to refill it?

I'm going by some guides I found online for the vinegar instead of alcohol.
I just found another:
"An organic tincture can be made with solvents other than vodka. Glycerin, vinegar, grain alcohol, and rum are all other choices. However, glycerin and vinegar don't store as long and may not be strong enough"
You don't think this will be sufficient to keep it from going bad? Should I keep it in the fridge or is the whole thing likely a lost cause?

So if I have appx. 375mL filtered water with appx. 125grams of Reishi extracted in it - there is about 300mg per mL? This is all appx as I had a crappy kitchen spring scale I was working with at the time.
So I'm seeing different doseage advice all over the internet. I'm thinking i should take either 2-3mL for the first week and then 1mL a day for every week after that. I'll make the ice cubes and freeze the rest so it doesn't go bad.
Still don't know if the vinegar extract will go bad or not, maybe I should just hold out until I get some vodka.

try working on a dose of 1000mg per day so you would need approximately 3.5ml per day that should be enough to put in a ice cube tray which will give you the long term storage.
In terms of alcohol, rather extract with alcohol and then evaporate it off once it has extracted and add the powder residue to the water extract, I have never heard of vinegar for reishi extract. I know Grifola is extracted with glycerin, what were they using vinegar for?
