Next step up in difficulty after cubes?

I've had a little experience growing cubensis but I wanted to try something new. I'm not an expert so I was wondering what might be the next step up in difficulty. I've read that ps.subaeruginosa, ps.aucklandii, ps.azurescens, and ps.cyanescens are all very potent and for that reason I have been wanting to try to grow one of them or some other potent species. I've also been intrigued by sclerotia and so I've looked into Psilocybe tampanensis.
As I said, I am still a novice. I also think I would benefit from watching some instructional videos. I watched one before I began my first grow but I've come to find that much of the info was incorrect and/or incomplete.
Any thoughts for me? Video suggestions?

Truffles just for fun and then fruit a truffle producing p cube other than that pans and azure sounds good

all of those are best done outdoors and nearly impossible indoors with about a 1% chance of success with the exception of the subs which i would give about 50 lol tamps are good but not really a step up, there easier then cubes lol, most try pan species after cubes

Definitely pans, or maybe try some edibles. They can be a lot of fun too. I'm growing edibles for fun and stones as my source of tripables.
