Dunkin' question

FINALLY my brown rice and rye flour/vermiculite jars are colonized. I'm going to do it right and give them several more days to consolidate before moving forward. They took forever because I used 1pt jars with only 2 inocculation holes and being covered in a dry vermiculite layer there was no shaking either. That and the less than ideal temperature made it slow going. I have to say--it was sort of Zen watching the mycellium creep along like that.
In any case, I understand what needs to happen now--to replenish the moisture I lost over the past weeks by dunking. I also understand that it's better to submerge them a little bit to increase the water pressure. The extra pressure should help force the water deep into the cake.
I'm curious now about the temperature of the water. From what I read, they say about 40F is ideal. Unfortnately my fridge is one of those tiny dorm room sized ones (and not terribly clean, I'm ashamed to admit).
Since I live in an arctic wasteland, I can easily and quickly produce ice for cooling the water. Do you think it would work if I just submerged the cake, covered in a plate, and put a chunk of ice on top of that? The ice would melt, running ice cold water into the bucket.
Also--is the cold water required to "shock" the mycellium, or is it more a problem of retarding bacterial growth?
Thanks for all the help on here--so far the grow is going well. Probably should have read some forums before I started knocking up jars, but all's well that ends well I guess.

Thanks--although I have to say, ice is something not in short supply around here these days.
Also--what variety is that beautiful monster in the right-most picture?

Just forget about the ice
They are a variety of Cubensis that originally someone put a label saying "B+" on but I believe in that pic were several generations away from that. They were so potent my isolates are labelled destructo A, destructo B etc....
