Hint: This chemical starts with the letter "G".
It was described as an antibiotic in a separate 1950 publication.

That gave it away! It's grifolin! Apparently it increases levels on an enzyme called death-associated protein kinase 1, which I'm guessing is the most metal-sounding enzyme!

AKA - Dextrose

I know what it is but I want others to feel welcome here. Someone can get this easily.
Hint: There is sometimes a "β" in the chemical. β stands for "beta" in chemistry, which I learned from this site:

I'll take the general class of compounds which is the "β" word you were hinting at, but the answer I was looking for is the specific variety of "β" compound that I posted.
In other words, the specific name for the β=1,3 β=1,6 form.
For one million bonus points- name the mushroom it was isolated from!

Polysaccharides are polymers, so the dashed lines on either side represent the repeating unit bonding sites.

It doesn't look like anyone wants to guess it so I'll go. It's β-(1,3/1,6)-D-glucan aka pleuran, isolated from Pleurotus ostreatus. It's reported to have immunomodulatory effects.
 This chemical inhibits a very useful enzyme.

Aww man, and I wrote a nice little blurb, too…
The class of compounds is called beta-glucans, and the specific one shown is pleuran, which comes from Pleurotus ostreatus.

Beta-glucans are polymers of the sugar glucose bound together with ß-glycosidic bonds. A glycosidic bond is simply a bond between a sugar and something else, and the ß refers to the position of the oxygen attached to the first carbon in the ring. In glucose, when the oxygen (the one highlighted in red or green in the diagram) is above the ring, the bond is called a beta-bond, while if the oxygen is below the ring, it is an alpha-bond. The "1,3" and "1,6" mean that the oxygen on the first carbon on the chain is bonded to the third carbon in the chain, and to the sixth carbon in the chain, respectively.

I'm not a fan of chemistry either and probably wouldn't have studied it if I had the choice, but it's an inescapable part of biology (and my work).
