Fruiting Chamber Size and Height Inquiry

After scavenging for clear plastic bins across my property, the tallest I found was this. It's a grand total of 9 and a half inches tall. I intend to make it into a SGFC. My jars are 4 inches tall, 2 and a half inches wide at the mouth and I'm concerned about putting my pretty little GT cakes into a space too small for them. I'd like to start off with two cakes fruiting, but I have no intention of placing more than three half-pint cakes in at a time.
If I set the cakes on the perlite vertically, will a short ceiling stunt my golden teacher's growth? Or would they simply start to grow crooked if they hit the lid?
I've been thinking a lot about setting the cakes on their side in the fruiting chamber. Might that cover to much surface area over the perlite (esp. with three cakes), affecting the humidity in the chamber? I plan to set the cakes on aluminum foil.
Should I be especially concerned about humidity in a chamber that small? Should I be especially concerned about anything in particular?
How much perlite should I use? Would 3 inches be enough?
Would it be best to abandon the SGFC all together and cut up some 2 liter bottles? An SGFC seems to be superior, but it's not like I would know.
This will be my first time growing, and I'm as nervous as I am excited.

that will be fine, build it to spec and yes you can lay your pints on there side to fruit and 3-5 inches of perlite will cut it

Are you sure there would enough room for the perlite if I laid them on their sides? Does the surface area of the perlite matter at all?

My containers the same height as yours, you have plenty of space. If a mushroom starts growing into a wall or ceiling it will just follow the wall or ceiling while it grows. If they should reach the ceiling, just be gentle when removing the lid and putting it back on.
