Dehydrating question for next flush.

Hey all, I have the Nesco FD-61 and was wondering something about dehydrating. I dehydrated on the top 2 racks, closest to the heating thing on top that pushes air to the bottom. My question for the next flush I plan to dry, is it okay to leave them that close to the heat/air? I ran it at 95 for most of the time then 120 for the remainder of the time. I dont think thats too hot? I had fully dry small mushrooms in 8 hrs, but left them for about 12 and had fully dry big mushrooms in about 15 hrs. But I am worried me not rotating the trays may of "cooked" the mushrooms vs "drying" them if they sit too close to the heating/air element? In the case I am not dehydrating properly I figured I would ask the community .. Oh one thing I also plan to do is remove all the caps from the stems next time, it seems the caps dry out alot faster than the stems. Thanks everyone!!!

Turn the heat wide open and stick them on there

Yeah I plan on using the heat at 160 next time to go for a faster dry, so them being close to the heating element wont hurt? I assume it would be no different if I had the entire thing packed top to bottom with mushrooms? I was just concerned about the whole rotating the trays thing and the possibility of my drying turning into cooking bc I didnt rotate. I would hope they dont get hot enough to "cook" the mushrooms, even if they are close to the heat element.

You wont ever cook them in the dehydrator, now if you tried drying them ina oven...yes.
I just throw my fruits in the dehydrator and let it run for 12-24 hours,sometimes if I have a lot of thicker stemmed fruits I'll turn it down to 90 for a few hours to let the inside moisutre move outward, but then back to 145 and check every so often. When they're done I just throw ina quart jar and put ina cool dark place =)

Awesome! I was worried bc I picked a cpl shrooms up while bagging and they felt pretty warm, and that damn dehydrator top was hot to the touch but not that bad to the point it hurt or burnt me lol. I got them bad boys in a ziplog bag then inside a mason jar tucked away in the coolest part of my basement inside of a double zipped bag...tryna do all I can to keep air out LOL

you can split those big fruits open and they dry much faster.

Awesome, I will do that next time I was mainly worried about using the top tray, I was thinking today I should of put them on the bottom rack furthest away from the heat. I guess 90-150 degrees wont hurt them tho.

I put my biggest fruits closer to the heat sores so they dry quicker. I used to be paranoid about potency loss from heat but iv recently found that 160 isn't hot enough to hurt any thing. Its true increased heat increases oxidation but letting them sit longer also exposes your fruits to more oxygen.
