I found this video very interesting, but I had one question:



At the stage where they birth the spawn bags (around the 4:30 mark), they just cut a slit in it and let the mushrooms grow out of that. Wouldn't that be considered a bit wasteful, since they could allow mushrooms to grow off of the entire mycelial mass?

It seems to me that the yields would be much more significant. I understand this is a large-scale production and they have room for waste, but (if that's the case) why not use the entire block?

The mycelium can carry nutrients throughout the substrate, Want some big fruits or lots of small ones.

They likely wouldn't have that much greater yield from exposing the whole block. Rather they'd have a much higher maintenance fruiting environment condition to work out. This makes the environment and block maintenance very easy for them.

Many of these edibles companies are using isolates that will pin where they can and use the whole contained sub block to migrate nutrition an water to power clusters from whatever fruiting sites they find. 

It's possible to treat great Cubensis isolates this way and still end up with full yields.

With how we as hobbyists & home growers are able to provide fruiting conditions though we typically prefer letting them shred as much as they like by giving them wide-open opportunity which is also conditionally ideal all-over.
