Once my time is up I simply turn off the stove and walk away.
30 minutes later when the pressure drops naturally I open it up, switch out the jars, and start another cycle.

I use an autoclave but once I hit 15 PSI I have to fiddle about with the stove to get it to stay at the temperature I want- watching it carefully to see if it doesn't drop or rise in temp!
Don't get too exact though, a little over or under is no big thing, just make sure it stays consistent and not rising or falling! The main thing is getting the knack so you can go away and rest for a bit!
If I can maintain the desired temp for about 10 minutes or so I know that I can rest assured that the temp will stay that way throughout the cycle! Always keep an eye on it though! Don't wander off and get stoned!
I'd like something that could set and control the temp or PSI automatically, but I tend to use that time to tidy up my house and the mess I've made anyway so I'm always on my feet monitoring the situation!
Oh and don't use the electricity or plug to heat up your autoclave! As tempting and rapid as it may be, you'll never control it that way without a thermostat, and it will just blast on up to about 20 PSI which is really too hot (and scary) for our purposes! Cracked many glass jars this way!

so are you saying you have an electric autoclave and opposed to plugging it in you just heat it off your stove? never considered that an option, this might be a stupid question because the entire purpose of this tool is it being a heating mechanism, but putting your electric auto clave on an oven burner doesnt effect any of the electric mechanics in it?
