Pressure cooking quart jars (question)

so im about to start a wbs grow and the tek i am following says to use "at least 16qt PC" i only have an 8qt.
It can hold 3 jars at a time, do you think it will be fine? or should i get a bigger one.

it will work but bigger i won't argue with for small ones you may consider running it just under 15 psi, it will help keep your water in for the whole run

So long as it holds pressure @ 15 psi, a 90-120 minute cook would be sufficient.
That model, though smaller than recommended can work great for education. You can learn lots with just one quart of colonized grain.
If/when you move forward and start seeing bigger, you realize that a "66qt monotub" requires 4-6+ quarts of spawn depending on circumstances. In your situation that would mean 2 full cooking cycles to make one tub.
The 16 quart PC generally will hold 7 quart jars, so it is essentially a time saver.
My opinion is that what you got will work great for learning things, but your education will certainly move faster the more spawn you can get colonized.

3 qts at a time will have you spending a lot of time babysitting the stove.
Presto 23qts can PC 10 jars at a time and they only cost about $75.
