Pressure cooking at higher PSI
    #1918937 - 09/15/03 05:13 PM (20 years, 6 months ago)

I was wondering what the disadvantages are to cooking at around 22 psi. That is what my pressure cooker can do. Would this do any harm to a popcorn substrate? Wouldn't it be better to kill all of the bacteria?

that's not bad at all.... It must "at least" be 15 psi to allow water in it to reach 120C while boiling... So i don't think it'll hurt... Just try a jar or two and see for yourself...

Just reduce the PC time if you raise the psi.

How much do you think I should reduce it to if the psi is 22?

I remember seeing a post about it somewhere but I can't remember where I saw it. Try to do a search.

Reduce it like 45min. if 60min. or so.... I don't know if water boils @ a higher temp. @ 22psi... But they wouldn't do that if it doesn't right?... Since you're sterilizing (not pasturizing) the only disadvantage would be drying of substrate... Trying is the best answer IMO.... Good luck!...

The higher the PSI, the higher the temperature. TMC has a conversion guide in it but my copy is downstairs. Maybe someome could check theirs and give the table? If you have it at a much higher psi, you have it hotter, and thus, more chance of breaking down the nutrients.

Just be careful! That's a fairly high PSI, unless you've got a hoss PC. Don't wanna blow up the house!
