I've had soft-ish cheese last me for at least a week without spoiling

I used to make Spirulina Bee Pollen bars. One bar would last half a day of hard hiking.
I got the idea off the wrapper of the original commercial product and made much more potent ones for a lot less money.
Ingredients I remember were
Oats (rolled) Spirulina Bee pollen raisins or nuts optional liquid lecithin as an emulsifier to hold the bars together vanilla extract Honey (lots)
Mixed by hand in a huge bowl (messy) and then spread on four sided cookie sheets. Put plastic wrap or wax paper on top and then another cookie sheet pan on top and weigh down with rocks or weight and let sit over night to set and harden and then cut into squares and put in baggies.
They are an amazing energy source and sorry I don't have the proportions anymore but I figured that out and so can you. Make small test batches until you get it perfect. Best energy food I ever found in 30+ years of backpacking.

OK I found my recipe.
For a large batch
2 lb spirulina 1 lb bee pollen 2 1/4 lb rolled oats 1/2 lb unsweetened cocoa 6oz maple syrup or barley malt 3 1/4 lb. honey 5 tbl. vanilla 8 oz. liquid lecithin.
Mix wet and dry ingredients separately then mix together.
Then follow my earlier instructions. May be stored in the refrigerator for months or longer.

I haven't tried this for backpacking, but i don't see why it wouldn't work.
I mix dates/dried coconut at 1:1 ratio with a splash of vanilla extract in a blender.
Squeeze what results into balls, let them set in the freezer and then you have energy dense convenience food, all natural.
Love it, keep these around all the time.
Might fall apart if it was warm though. Worth a try.

Add liquid lecithin as an emulsifier and you're good to go.

emulsifiers bind things together. Many candy bars use an emulsifier like liquid lecithin to hold it all together so it won't fall apart. Try it with your concoction and you'll see.
