Sterilize or Pasteurize?Still not understanding

I have around 7 jars of different sizes filled with brf,verm, and water. Going to turn some into cakes, some in trays. I only have a pot, which one do u guys suggest/have a good tek link of it. Thank you so much in advance!

If you have lids use them instead of foil. Also know that taller "jars" have issues, and that pf tek really needs 1/2 pint wide mouths for consistent success. Other sizes work as well, and I can't say they they won't...just might not be as good as the standard.

interesting thanks for the help guys. What would be the reasoning behind sterilizing cakes and pasteurizing bulk material? Is sterilizing pretty much boiling temps?

Do not try to steam sterilize anything bigger than 1/2 pint. You will fail 90% of the time. If you do not have a pressure cooker, you must follow the tek EXACTLY as it is.

yes boiling temps work for brf cakes they don't carry the endo spore load most grains do but need to be sterilized. bulk subs carry whats considered benificial microbes that will help defend your sub against contams while your myc colonizes it, same process that our milk gets

just add time to the process, i do wbs for 8 hours

Its iffy man. Steaming a large jar of BRF... is asking for it. I'd rather spend the $8 and get some 1/2 pint jars. Or bust out the $25 for a little pressure cooker.

whats iffy about it, i've been steaming qt's of strait up grain do it right and don't cut corners, not that i think pints are a good choice for brf flour jars anyway but sterilizing them isn't the reason, just use about 10% less water then the tek calls for and steam for 90 minutes or 120 if it makes you feel better

Beautiful straightforward info. Some people say have a few inches of water in pot other's say fill up the water till it's 3/4 the height of the jars? Which one do I do? I can stack my jars on top of each other right, got 1/4 pints im gana try out. Whats sterlizaition temps usually?

A few inches is for steaming, water 3/4 the way up the jars is for pasteurizing. For BRF steam for 90-120 min like cronicr said. You want as high a temps as you can hold for sterilization.

Sweet!!! So I don't even need a food therometer? Just make sure the few inches are boiling (keep addin water when runs out). Won't mess anything up if my temps go over boiling point?

For BRF? No you want those at a constant boil. The only time you need a thermometer and to watch your temps is for pasteurizing bulk materials. Grains and flour need to be sterilized, so high temp is key.

You cant go over the boiling point any extra BTU(heat applied) will only make it boil off faster but the water and steam are still 212F 100C. You should have enough water in your pot to last the whole 90-120M without needing to add more. The tight fitting is important it keeps the steam in and also helps you to avoid boiling your pot dry.

Some bacteria survive pasteurization. The bacteria that survive can be beneficial on bulk substrate but would reproduce quickly and run amok on more nutritious substrates like BRF.
Sterilization temperature is boiling but higher temeratures, which require pressure to achieve, greatly speed up the process. Cakes are dense and moist so they can be sterilized relatively quickly with only 212F steam.

I've used both tall and short, the short ones colonize way faster. You'll almost always have bottom issues with the taller ones...they compact a little more so the myc takes a bit longer. My short ones colonized in about 21 days

if your not using the wide mouth halfs simply take a little water out of the equation, like about 10%
