when do I try to fruit golden oyster?

This is my block of inoculated golden oyster, when should I start trying to fruit it, and is there anything else specifically I should do, ie put it in the fridge for awhile, dip it in cold water, etc?
I plan on using a fruiting chamber, that has a 24w t5 sunburst 'blue' light, a ultrasonic humidifier and a computer fan that should give about 107 CFM of air as many times a day as I want it to (how many times should I?) and should I loeave the light on 12 hrs/day?
The temp is a bit warm, I can probably go as low as 75-80 easy enough though, maybe a bit cooler since it will have the mist, or I can go higher. Also, should I leave it in the plastic bag, cut some more holes in the plastic, or remove it from the plastic entirely? any other things I'm not thinking of at all?

You can fruit if it's fully colonized, I'd leave it in the bag. Do you have some x's cut for the fruits to grow out of? Stick to the lower end of the temp. range for the species and you'll get better quality fruits with more color to them.

Better strains will pin like mad in the bag, making hundreds of clusters. I like to wait till they just start to form then slit multiple clusters. I generally make 8-10 slits per bag, unlike temperate oysters.

That makes it sound like to me, that you do not have any openings in the bag at all, until after they start to form pins, and then you make the slits after, right? so,1) Do you use breathable bags? 2)are you using special strains of something other than oyster? I have been told to make slits in the bag from the get go, even when initially inoculating/spawning, is it right that you do not?
