They make miracles with leftovers 
Pasta leftover? Make an awesome frittata like I just did. Veggies or seafood leftover? Make a risotto. Anything leftover? Throw it on a pizza.
What's your best quick leftover transformation dish?? Are you as smart as an Italian?

Using trim to make medibles is probably the best leftover dish I can imagine 
Thanksgiving time is when one must be very creative with turkey leftovers because there is usually a lot. Some make turkey salad or a just sandwich. I like to make turkey tetrazinni

I kinda of just mix all my leftovers together and eat it vanilla. If each individual component is good then the melange is usually pretty good. That's french for mix. It's actually sort of a Chinese thing to do...

Funny you should mention, that is supposedly how the dish "chop suey" came to be (myth). Some Chinese restuarant in California had drunk Americans miners come in after closing time and there was not really any food left to serve, so they tossed a bunch of stuff together to avoid being beaten. The guys loved it and asked what it was called to which they replied, "chop suey". Which I believe means random bits or odds and ends.
