So I grabbed a quart of Blue Oyster grain out of the fridge to G2G with today and noticed this:
    
Any idea why my supposed Blue Oyster is fruiting like this?

I'm gonna leave it be until I find out if this and environmental or genetic trait, or if I just got the wrong culture. It does grow like oyster myc though.

So I'm gonna make myself sound like an idiot here, but if it were an earthstar, wouldn't the little 'petals' be closed until more mature, then open? Isn't that how they work?

Not so much. The little flaps on earthstars probably have less to do with holding in spores as say, a veil or something similar, but they are almost more like little "raindrop levers" that bump the sac and help eject spores.

Glad I stumped a few of you guys. I also thought Earthstar when I first saw it, but there is no separation between the "petals and puffball" formation. It's all one piece.

I see the nipple cap now. Looks like you need more FAE and higher humidity. I would agree that it looks more like p. eryngi than p. ostreatus.

my king oyster did that when i left it outside in the cold for too long (a month with temps under 45)
