Slow Casing

I have a casing that has been in the incubation process for about two weeks. It consists of about 1.25-1.5 inches of colonized popcorn substrate with a thin .25 inch layer of coco coir/verm 60/40 mix on top. The strain is amazonian and jar colonization went pretty smoothly until about 70% colonization, when it slowed tremendously. It ended taking around 2 weeks to fully colonize the bottom quarter, making the entire process last about 3 full weeks. I used 10 quart jars 2/3 full of colonized popcorn in an aluminum foil type baking dish that measures roughly 14 inches long and 10 wide. It has been kept at around 82 degrees from it's conception.
Enough with the background info. My problem is two weeks in and there is only one circular spot that is colonizing into the coir/verm layer. It measures about 2x2 inches. From FAQ's I know to cover this layer with additional coir/verm mix to allow other areas to catch up, but I don't have any confidence the other areas are going to colonize. Instead I'm wondering if I should go ahead and try to fruit this spot and screw trying to get the whole casing to produce. But, I want to get some second opinions before I make my decision. The spot does look vigorous and is spreading outward at a reasonable pace. Could this one spot continue to spread and colonize all the substrate or should I just try to scrounge what I can out of this spot? Thanks.

You should still be maintaining incubating conditions at this time.
