Can that be an environmental thing or is it a genetics thing?
It is probably both but meh. What do you think?
Also, will you folks here mind telling me what you think this is.

Perhaps I will be able to answer this for myself in some time.
I think I will get another culture, hopefully not the same as this one(sporeworks), and be able to answer my own question. I think sporeworks is great btw.
Ill let ya'll know what I find out if I do.

Almost all gourmet mushroom mycelium is white, the 'yellow' in yellow oyster (assuming its the same as golden oyster) describes the yellow in the mushroom not the mycelium.
Im growing golden oyster myself but not on straw atm so I can't tell you what the mycelium shapes are meant to look like.
Oh wait, is this bag injected with a spore syringe? Then those most be the colonies of mycelium forming from the spores.

Usually environmental I would think, although I suppose it could be either. Would be strange for Sporeworks to sell a strain of yellow oyster that wasn't yellow though, you know?
What temps are you fruiting them at?
And to clarify, this is a separate issue than the contam bag, yes? I mean you have fruits they're just not yellow?

Here are some pics, same strain, same batch of buckets:
 
The first one was in the outdoor greenhouse when the temps dropped, and was the only cluster on the whole batch. I'll bet if you let it pin and then dropped the temps they would get dark yellow and still have a decent pinset. 
The second one was in my bedroom for kicks, the buckets are still sitting outside, so I brought one in my room to warm it up. Started out with a bag over it, then just misted in open air. High temps, poor lighting, air flow and humidity.

Just be careful not to get them too low and try to find the sweet spot because that first cluster took for-e-ver to grow.
