Harvesting.. Where to cut?

Hey everybody, I had invitro pins inside my jars and the mushrooms got pretty big before birthing. Now I have birthed and had in the SGFC for 4 days and one of the mushrooms cap has just opened and is ready to harvest.
My only question is that the stem is growing up the side of the cake, so should I cut the stem away from the side cake or just cut it from the top of the cake?
Unfortunatly I cant upload pics right now. But heres a picture from my other thread right after birthing that shows the stem growing on the side of the cake its the same now, just bigger.

You should be able to pull it gently away from the cake with out doing to much harm to the cake. Might bruise up the fruit a little but should seperate fairly easily.

Ditto. Bet it's held on only with a few mycellium, if at all. My invitro pins have tended to basically fall off so far.

Hey bro, you might want to wait a couple of days. Sure, you can harvest them now, but those 3 guys have barely even formed a gap large enough for the veil cap. This this picture I'm almost uncomfortable even referring to it as a veil cap, since it doesn't really look distinguished enough to be one yet.
Given that, just put them off as gently as you can. If it rips a little, you're fine. Expect bruising like another user said.

If mushrooms are barely attached to the substrate, twisting them off works well.
If they're fully anchored into the substrate like a tree in the ground, it's best to cut them off at the base with a sharp knife. RR

Thanks everyone
The bottom of the stem was anchored down pretty well (enough to were they didnt pry easily). So I cut them off at the top of the cake.
This is still my first flush, so will my cakes be ok through the rest of the process with this stem on the side or should I cut it off after the first flush is complete?

I always just stick to twisting off. Sometimes it will take a piece of the cake with me, verm and all! But I'm not trying to be a 96% pure grade of meth like you are RR 
But the question was referring to invitro shrooms. I find they kind of fuse with the cake after a period of time, so there is ripping. But that was my only 1 experience.
